CHOCOLATE PEANUT BUTTER OATMEAL TRUFFLE Balls
Cookie Center:
2 cups sugar............................................................................1/2 cup butter
1/2 cup milk............................................................................1 tsp. vanilla extract
4-5 TB unsweetened cocoa powder (not cocoa mix) ~ I like dark
1/2 cup peanut butter (crunchy or smooth)
2-3 cups old-fashioned oatmeal (NOT quick or instant oats)

In saucepan, combine first 4 ingredients. Cook, stirring frequently, over low heat until butter is melted. Increase heat to medium and boil one minute until sugar is dissolved.
Stir to mix well, and remove from heat. Stir in peanut butter until melted. Add vanilla (it should bubble when added). Add oatmeal and stir until thickened (chocolate should appear glossy). Drop by teaspoonfuls onto wax paper to cool and harden. Roll into tight balls in the palm of your hand ~ put back about 2" apart on the waxed paper to prepare for dipping. * Makes about 2 dozen

Chocolate Coating:
About 6-8 squares of unsweetened or semi-sweet chocolate (can also use chocolate melting wafers or bark, or even chocolate chips)......................................................about 2-3 tsp. vegetable shortening (i.e. Crisco)
2-3 squares white chocolate or vanilla bark (or white chocolate chips)
1 heaping tsp. creamy peanut butter............................1/2 tsp. vegetable shortening
Put the chocolate and in a microwave-proof bowl and heat for about 1 minute. Stir in the shortening, and continue stirring well. The chocolate and shortening should be melted and smooth (keep stirring for a minute or so, until the chocolate melts ~ if necessary, zap it for another 25 seconds or so).
Take each hardened peanut butter oatmeal cookie and roll it in the melted chocolate to coat completely. Take it out with a fork (letting the excess chocolate drain off) and put onto the waxed paper to harden.
Give the chocolate a few minutes to harden up, while you melt the white chocolate in the microwave for about 1 minute. Stir in the vegetable shortening and peanut butter until it's smooth. Then drizzle over the tops of the cooled chocolate dipped balls.
