DARK CHOCOLATE covered CHERRY COOKIES
1 (18.25 oz) box dark chocolate, triple chocolate or chocolate fudge cake mix
1 egg....................................................................1/2 cup unsalted butter, melted
1 TB dark unsweetened cocoa powder............2 tsp dark chocolate syrup
about 12-15 cherries (maraschino or candied), minced (cut in very small pieces)
about 15-18 whole cherries (maraschino or candied) cut in half

3/4 cup powdered sugar...................................1 TB dark unsweetened cocoa powder
2 tsp dark chocolate syrup...............................milk or maraschino cherry juice

Preheat oven to 350. Line baking sheets with parchment paper.
I use an electric mixer, but a big bowl with wooden spoon is fine too. Mix the cake mix with egg, melted butter, cocoa powder and chocolate syrup until it's smooth and will somewhat come together in a ball. Mix (or knead) in the minced cherry pieces.
Roll into balls (about 1-1/2” diameter). Put about 2” apart on baking sheets. Press a cherry half gently into the center of each cookie. Bake at 350 for 8-10 minutes and remove from oven. Let cookies sit a few minutes, then remove to rack to cool completely.
Meanwhile, whisk the glaze ingredients together in a small bowl, adding the milk or juice 1 tsp at a time, until thick, smooth drizzle consistency. Drizzle over the tops of the cooled cookies. Makes about 2-3 dozen.
