This is a recipe that I've been making for about 35 years. It's perfect for dessert, brunch, or a light supper when I have the neighborhood girls over for a game night. ** You can use all cheese, or sometimes I'll alternate cheese with one of the fruit flavors (my favorite is apple) ** EASY **

12 (2 pkg) frozen blintzes (can use all cheese, or alternate cheese with blueberry, cherry or apple ~ don't use all fruit or it will be too sweet for a brunch main dish) ~ I found them in the International part of the frozen food section, but could also be by the frozen breakfast foods.
1/2 cup butter (1 stick)
4 eggs
1/4 cup sugar
1-1/2 cups sour cream
1-1/2 tsp vanilla extract
1/2 tsp cinnamon

Melt butter in 9x13” pan. Place blintzes in single layer in pan. Roll and coat each with melted butter. Combine remaining ingredients; beat until smooth. Pour on top of blintzes. (May be prepared the night ahead to this point; cover and refrigerate) Bake uncovered for 45-60 minutes at 350. …
Can be served as a dessert or brunch ~ You could serve with side dishes of sour cream and preserves, if you want (but not necessary). If I'm serving it for brunch (or even a light dinner when I'm having the neighborhood women over for a Girls' Game night), then I serve a green salad with it.
Lighter eaters may only eat 1, but men or teenage boys may eat 3 as a meal, so judge accordingly as to how many this will serve ~ 1 should be enough for dessert, especially if you put sour cream or fresh whipped cream on top (sliced strawberries on the cheese blintzes ~ maybe a drizzle of caramel syrup or Heath bits on the apple blintzes)

REVISED AMOUNTS for packages of smaller blintzes:
3 (13 oz.) packages (I used 2 cheese and 1 apple) = 18 blintzes
12 TB butter, melted...……………………………………...6 eggs
1/3 cup sugar...………………………………………………...2-1/4 cups sour cream
2-1/4 tsp. vanilla extract...………………………………..3/4 tsp. cinnamon
Proceed as above to prepare recipe (although I also sprayed the sides of my 9x13" pan with buttery non-stick spray)
