This brand of "no sugar added" chips also had white, milk and dark chocolate chips ~ so you could use any of those to melt ~ and even substitute butterscotch instant pudding! Have fun with variations!
CHOCOLATE PEANUT BUTTER Chex Mix MUDDY BUDDY
8-10 oz. chocolate chips (your choice ~ see comments above)
about 5-6 cups Rice Chex (or other chex ~ mine was generic), which is about 1/2 the box
2 small packages instant pudding (I used 1 chocolate & 1 vanilla)
about 2 cups peanuts (any type you want)
1 package Reese's peanut butter chips (or mini-baking pieces, but those have sugar)
about 1 cup mini M&Ms (but these do have sugar)

Get out a really large bowl for mixing ~ rubber scraper ~ glass bowl for melting the chips and a small-ish whisk. Have all your packages of chips, pudding, etc. open and ready to use b/c once the chocolate is melted, you need to work quickly.
I put the chocolate chips in the microwave for 45 seconds. They were beginning to "sweat" but not really melt yet. So put them in for another 30 seconds. You can see what they looked like in the photo & then what they looked like when I whisked them smooth. Now, QUICKLY scrape all the melted chocolate over the cereal (which should be in the big bowl) with your rubber scraper, and use your rubber scraper to get the melted chocolate mixed over all the cereal in the bowl.
Now, again QUICKLY sprinkle the dry pudding mixes over the chocolate-drizzled cereal ~ and then use your rubber scraper to get the cereal thoroughly coated with that too (it acts like powdered sugar does in other recipes). Put all your other stuff in, and mix well. It can be stored in Tupperware containers or big zip-lock baggies.
VARIATIONS:
Try melting white chocolate chips with instant vanilla puddings ~ and whatever add-ins.
Try milk chocolate chips with instant butterscotch pudding. If you don't care about sugar, then you can use butterscotch chips here.
You could even use dark or white melted chocolate with strawberry or cherry jello (instead of pudding), but it wouldn't have that "powdered sugar" texture it. I think there are even some strawberry chips you could add ~ or dehydrated strawberries ~ or Craisins.
