I've been making these pancakes for about 25 years. I'm not a fan of regular pancakes, and these are much lighter in texture, and I really like the creamy flavor. **
You can use any fruit or Greek yogurt that you want ~ and there's also cottage cheese in them! ** |

1 cup yogurt (with fruit ON THE BOTTOM ** ~ Greek honey ~ your choice)
1 cup small curd cottage cheese
4 eggs
3/4 cup flour
1 TB. sugar
3/4 tsp salt

Combine yogurt and cottage cheese, using your mixer or food processor (to smooth out the cottage cheese). Add other ingredients and ~ if using FRUIT ON THE BOTTOM yogurt, gently fold all together with rubber scraper until well blended. If you're using blended fruit or honey yogurt, you can beat with spoon, blender, mixer or food processor until smooth.
Bake on very hot greased griddle until bubbles break on surface. Serve with butter, syrup, honey or powdered sugar. Can top with fresh fruit, if desired.
Makes about 24 (2 dozen) 3-4” pancakes
** NOTE: If you use blended fruit yogurt, the pancakes will be colored. Best to use Fruit on the Bottom, and very gently fold it in.
