Have no fear ~ Nana is here!! I made up a very fast & easy CREAMY SALSA DIP from what I had in fridge & pantry to bring instead. (I always have a couple of packages of cream cheese in the fridge, since it keeps about 3 months in there unopened.) I think this may become a new family favorite! ~ along with tortilla chips for dipping
CREAMY SALSA DIP
1 8-oz package cream cheese (room temp, if possible)
1-1/2 cups store-bought salsa (I used medium ~ mild or spicy are also fine)
about 1/3 cup onion, chopped ............................about 1/4 cup fresh cilantro, chopped
1 small can diced chilies (mine were fire-roasted but mild are fine)
1 tsp. smoked paprika.......................................... dash of salt

You can see how "lazy" I can be from how I made this ~ haha
Put the fresh cilantro and onion in your food processor and pulse until fine chopped. I just put everything else (except the chips) on top and pulsed that all up until it was mostly smooth (with just a few "lumps" from the chunky salsa and chopped onion). Keep in a tupperware container in the fridge.
Notes: It would be best if you changed the blade on your food processor from the sharp one to the white blunt one (that doesn't really cut anything) ~ but we've recently moved and I have no idea what box that white blade is in! So I just pulsed with the regular blade. ** You could also put the chopped cilantro & chopped onion with the rest of the ingredients into your mixer, if you want ~ but that's just one more thing to have to wash!
