2-1/2 cups unsifted flour
1/4 tsp salt

Preheat oven to 350. Do NOT line baking sheets with parchment and do NOT spray with non-stick spray.
Sift (or whisk) together flour and salt. In another large bowl, beat butter and powdered sugar with mixture (or wooden spoon) until light and fluffy; beat in egg yolks and extracts. Add flour mixture and beat until blended. (This is where you would separate dough and add food colorings as desired).
Fill cookie press with dough. Form cookies on ungreased cookie sheets (I still use parchment paper). If using candy red hots, press them into the cookies gently.
Bake in preheated oven for 6-8 minutes (or until just beginning to turn golden on bottom). Remove to a rack and cool a few minutes before drizzling with glaze. Can be frozen Makes at least 5-6 dozen.
GLAZE: Start with about 3/4 cups powdered sugar ~ add 1-2 drops green food coloring and 1/2 tsp almond extract. Whisk in milk or cream (1 tsp at a time) until smooth, drizzle consistency. Drizzle over the cookies and then immediately put your sprinkles onto the glaze (if using)
