STRAWBERRY KRISPIE COOKIES
1 box white, yellow or butter cake mix (can be sugar-free)
1 stick butter, melted...........................................................2 eggs
1 cup Rice Krispies cereal.................................................red & yellow food coloring (about 3-4 drops each)
1/2 package strawberry jello mix (or almost the whole carton, if using sugar-free)
GLAZE:
1/2 tsp. strawberry jello mix..........................................milk or Italian Sweet Cream creamer, up to 2 TB
3/4 cup powdered sugar ~or~ 1/2 cup regular white Splenda whisked with 1/4 cup cornstarch

Preheat oven to 350. Line 2-3 cookie sheets with parchment paper. ***
Put cake mix, butter, eggs, jello powder and food coloring to in mixer bowl. Mix until smooth dough; then mix in Rice Krispies until well blended.
Drop by TB (or 1-1/2” cookie scoop) onto cookie sheets. Bake for 10-12 minutes, or until somewhat firm (but not hard). Cool on pan about 3 minutes, and remove to rack (or paper) to cool and glaze. Makes 2-1/2 to 3 dozen.
GLAZE: Whisk all ingredients together, in small bowl, adding extra juice as need, until smooth drizzle consistency. You can add a little food color too, if you want. Drizzle over cookies.
