My neighbor brought over a plethora of veggies from her garden and there's only my husband & I here now! So, after making Easy Refrigerator Garlic Dill Pickles ~ Homemade Roasted Fresh Garden Marinara Sauce ~ Bacon Jalapeno Red-Eye Jam (and bringing veggies plus some of what I made to my daughter) ... I still had bits and remnants of vegetables left, so I made a chopped salad to pull out as a side with dinner. My husband ate nearly the whole bowl, so I just refilled it (and finally used up everything except a few cherry tomatoes). Measurements aren't "carved in stone" because (1) I didn't measure and (2) you're using up bits and pieces of random veggies that you have.
CREAMY Tangy CHOPPED GARDEN Side SALAD
About 1-2 TB cream cheese (easiest if softened ~ mine was plant-based)
About 2 TB rice vinegar (mine was seasoned, but doesn't matter)
About 2 TB milk (any kind, but best if NOT non/low fat ~ mine was creamy oatmilk)
About 1-2 tsp. light agave nectar (or could use honey ~ I couldn't decide between them)
maybe 2 tsp. Kosher salt ..................................maybe 1 tsp. coarse ground pepper
about 1/2 tsp. ground ginger.............................about 1 tsp. dried dillweed
about 1 TB fresh cilantro, chopped (I added more when I refilled it the next day, but there was enough dressing in there so didn't need to add more)
Whisk everything up in a small bowl until smooth and creamy. (You may have to smash down the cream cheese with a spoon first to get it started.) Put it in the bottom of a medium bowl while you prepare the veggies.

I had 1 medium cucumber ~ it did have lots of seeds, so I cut it in half lengthwise. Then cut each half in half ~ and those halves in half. Now it's easy to just slice off the seeds into a plastic grocery bag that I had by the sink to put my veggie "trash" in. Slice into about 1/4" pieces and toss into the bowl with the dressing.
I had 2 Poblano peppers. They're not hot, but still took the seeds out ~ cut into strips and then into pieces about the same size as the cucumbers and tossed into the bowl.
1/2 medium white onion, chopped into pieces the size of the other things & into the bowl.
About 5 red jalapeno peppers (which weren't that hot) ~ took all the seeds out & minced them smaller, and into the bowl
A couple of tiny colored Bell peppers ~ also seeded and chopped
a handful of small Roma tomatoes, cut into quarters & into the bowl (along with some cherry tomatoes
Toss everything so that it's all coated well and put into a glass dish with a cover. Refrigerate. You can add more to it as it gets eaten.
