Crockpot BBQ Boneless BEEF SHORT RIBS
1-2 lbs. ~or~ 3-4 lbs. boneless short ribs
(for 1-2 lbs. use full can tomatoes, but half of everything else)
1 tablespoon minced or crushed garlic
1/2 medium white or yellow onion, chopped
2 to 4 tsp. honey or agave nectar (depends on how many lbs. beef).
1 tsp. dried thyme…………………….1 tsp. smoked paprika
1 TB liquid smoke……………………..1 can (15 oz) fire-roasted diced tomatoes
About 2 cups BBQ sauce (I like Stubb’s ~ I match the “hickory” or “mesquite” to same in the liquid smoke)
About 2-3 tsp. Kosher salt…………..about 2-3 tsp. pepper

Spray slow cooker with non-stick cooking spray. Sprinkle the onions on the bottom of the slow cooker. Put the short ribs on top of the onions.
Mix all the rest of the ingredients together and pour on top of the meat.
Cook on high for 4 hours or low for 6-8 hours. I serve with typical “BBQ” side dishes (coleslaw, corn on the cob, potato salad, etc.), although the gravy/sauce is also fantastic over mashed potatoes, rice or whole baked sweet potatoes.
