PEANUT BUTTER CUP COOKIES
1-1/4 cups all-purpose flour........................................1/2 cup granulated sugar
1/2 cup dark brown sugar, packed............................6 TB (1 stick) butter, room temperature
1 cup peanut butter (smooth or crunchy)........................1 egg
1/2 tsp. baking soda.....................................................1/2 tsp. baking powder
1/2 tsp. salt....................................................................1/4 tsp. caramel extract
1 tsp. vanilla..................................................................extra sugar for rolling cookies in
about 16 mini Reese's peanut butter cups, chopped
TIP: You might want to roll them in colored sugar for holidays or special occasions with color themes.

Preheat oven to 350. Line baking sheets with parchment paper & set aside. Put about 1/2 cup granulated sugar in a small bowl and set aside.
Beat together the peanut butter, softened butter, egg, extracts, and both sugars. Add baking powder, baking soda, salt, and flour & beat until just combined. Fold in the peanut butter cups.
Form balls of dough using a standard size cookie scoop (or heaping TB). Roll each ball in the small bowl of sugar; then put on the baking sheet(s) and gently pat down with the palm of your hand (just flatten slightly).
Bake for 10-14 minutes (depends on your oven). Cookies will be slightly soft, but that’s ok. Let cookies cool on sheets a few minutes before transferring to a wire rack to cool completely
