This is SOFT (like an omelette), not firm (like a quiche). If you want it firmer, you can add about 1/2 cup Bisquick or flour when you mix everything up.
BROCCOLI, HAM & CHEESE FRITTATA
3/4 frozen cut-up broccoli (thawed and drained)
3/4 cup diced cooked ham…………………………....1 cup milk
1/2 to 3/4 cup shredded cheese (any type you like ~ I like orange & white blends or all white blends)
1 tsp. Kosher salt………………………………………1/2 tsp. black pepper
1 TB fresh parsley, chopped…………………………..4 eggs

Preheat oven to 350. Spray an 8” square or round pan with buttery non-stick spray and set aside.
Beat eggs in a large bowl; add ham, broccoli, milk, cheese and stir. Pour into baking dish (spread out the cheese, ham & broccoli so they’re even in the pan). Bake 25-30 minutes or until center is set. (TIP: If you want to make it earlier in the day and reheat in microwave later, just bake for 25 minutes because it will be baking later too). Cut into squares to serve
Serves 2 really hungry people, or up to 4 lighter appetites. This is good with toast or biscuits, and maybe some sliced fresh oranges (or fruit salad).
