QUICK FIX if your baked cheesecake falls in the center:  Even experienced bakers will sometimes have their New York-style cheesecake collapse a little in the center.  I just pile in some homemade whipped cream and sprinkle with shaved chocolate (or maraschino cherries) and pretend that's what I'd planned all along!

Dinner last night was a Fresh TOMATO, ZUCCHINI and BASIL (from my garden) QUICHE * packed with veggies and cheese * (posted under Main Dish) and chunks of fresh-picked cantaloupe from the farm-stand *

KITCHEN TIP: I always get a perfectly ripe melon, by gently pushing in the stem end a tiny bit with my finger * then smell the stem end * if it smells like ripe fruit, then it's ready!
