WATERMELON MOJITO
about 1 cup of cut-up watermelon (I buy the small Texas seedless watermelons, and they're very sweet too)
1 oz. white RUM (1 oz. = 1 TB)... but you can add more if you like a strong drink
4-6 fresh mint leaves ................................................................ice cubes
about 1 tsp. lime juice
club soda, tonic water or lemon-lime soda {can be sugar-free} ~ (TIP: If your watermelon isn't really sweet, you might want to use the lemon-lime soda)

Put the mint leaves into a small bowl with the lime juice and rum; stir, slightly smashing the mint to release the flavor. OR, you can put the mint, lime juice and rum into a cocktail shaker or jar; and shake to bruise the mint leaves and release the flavor.
Put the watermelon into your blender and pulse until it's mostly liquid. Pour the watermelon in 2 large glasses, filled with ice. Add the mint/lime/rum mixture to each and stir. Top off the glasses with the club soda, tonic water or lemon-lime soda, and give another quick stir. Garnish with a mint sprig.
