I made giant ones with large cookie scoop (or ice cream scoop ~ or 1/4 cup measure) and only 5 to a baking sheet. They take about 14 minutes (but my oven is weird, so keep an eye on them) ~ they begin to crackle when they're done. I got 10 but you could get as many as 12.
These are good because the pudding mix keeps them soft, and the flavor is different. It's harder now to find root beer extract, but I think I got mine at Hobby Lobby (yep! can't stay out of there! ) Walmart may have it on their special baking aisle (it's not on the baking aisle in the grocery section.)
ROOT BEER FLOAT COOKIES
3/4 cup butter softened ……………………………3/4 cup brown sugar
1/4 cup sugar………………………………………..... 2 eggs
1 small box instant vanilla pudding mix dry (not prepared)
1 tsp. Root Beer extract ……………………2-1/4 cup flour
1 tsp. baking soda
1-2 cups white chocolate chips

Preheat oven to 350. Line cookie sheets with parchment paper.
Cream butter and sugars together. Add instant vanilla pudding to butter and sugar mixture and mix well. Add eggs and root beer concentrate; beat until well incorporated. Add flour and baking soda; mix thoroughly. Mix in white chips.
Roll cookie dough into 1" balls; put on cookie sheets. Bake for 7-10 minutes. Let sit on cookie sheets about 5 min, then remove to rack (or paper) to frost.
FROSTING : (OPTIONAL)
3/4 cup powdered sugar …………………………..1 TB heavy whipping cream
1 TB softened butter……………………………..…. 1/2 tsp root beer extract
Beat frosting until smooth and creamy. Drizzle over cookies (or frost completely). **
FROSTING that hardens quickly to take somewhere:
about 1/4 can ~ vanilla canned frosting
1/2 tsp. vanilla extract....................................1 TB cornstarch
Stir together in a small bowl until smooth. If you're putting on sprinkles, do it every 4-5 cookies, b/c this will harden quickly
Makes about 3 dozen regular ~or~ 10-12 Monster
