Mexican STREET CORN SALAD
2-3 ears corn ~OR~ 1 pkg. frozen corn, thawed^ ~OR~ 1 15 oz.(or so) canned corn, drained
2-3 tsp. fresh cilantro, chopped................................................1/2 jalapeno pepper, seeded & minced
1 TB mayonnaise (mine has olive oil in it) ......................................1/2 tsp. smoked paprika
1 tsp. Kosher salt...........................................................................1/2 tsp. black pepper
1/2 tsp. chili powder.....................................................................1/4 tsp. cumin
1 TB lime juice

Whisk together the mayonnaise, lime juice and seasonings in the bottom of a bowl. Add the corn, cilantro and minced jalapeno and stir to mix well. Keep covered in the refrigerator until time to serve.
Serves 2-4 as a side salad.
^ NOTE: If you forget to thaw frozen corn, just rinse it in water so it isn't stuck together. Drain well and make the salad with the cold corn. Any ice crystals left on there are fine as they'll melt into the dressing. In fact, if you're going to leave this out on a buffet, the ice crystals will keep it cold longer too.
