Easy PEACH COBBLER
With sugar or sugar-free
4 c. sliced fresh peaches …………………............. 1 TB butter
1/2 c. sugar or regular blend Splenda
1 egg ……………………………………………................. 1/2 tsp. baking powder
1 tsp. vanilla ………………………………….............… 1/2 c. flour
1/4 cup sugar ………………………………….............. 1 tsp cinnamon (divided)
Put peaches in 8” square or round pan. (I sprayed with butter non-stick spray first). Sprinkle with 1/4 cup sugar mixed with 1/2 tsp cinnamon. Bake at 350 for 20 minutes.
In another bowl, beat egg add 1/4 cup sugar, 1 tsp vanilla, 1 TB soft butter, 1/4 tsp baking powder, 1/2 tsp cinnamon. Beat until all is mixed. Pour or spread over hot peaches after the 20 minutes. Then put back into oven and bake at 350 degrees for about 30 minutes more until brown. Serve with ice cream or whipped topping.
TIP: If the topping seems too thick, you can mix in about 1 tsp of liquid coffee cream (sugar or sugar-free). I like Hazelnut or caramel.
HINT: I recommend Breyer’s Natural vanilla ice cream (regular, lactose-free or low carb {low carb has almost no sugar}
