Peanut Butter GRANOLA NUT BARS
2 cups old fashioned oats
1/2 cup chopped nuts (I like finely chopped pecans best ~ but you can use sliced almonds, or chunky chopped nuts if you like ~ chopped hazelnuts are best if you use Nutella)
3/4 cup peanut butter OR Nutella
1/2 cup honey
2 tsp vanilla
1 pinch salt
1-1/2 TB canola oil or vegetable oil
1/2 cup dried cranberries, raisins, coconut and/or dried apricots (cut up)
1/4 cup mini-morsel chocolate chips
Preheat oven to 350 degrees. Spread the oats and nuts into a single layer on a cookie sheet. Toast in the oven for about 10 minutes (watch carefully). Remove from oven and place in a large mixing bowl.
Combine the peanut butter (or Nutella), honey, vanilla and salt in a saucepan. Over medium heat, stir until peanut butter (or Nutella) is melted and everything is smooth and mixed well. Pour mixture over the oats and mix well. Add oil and stir until well blended. Cool slightly.
Stir in chocolate chips and pour mixture in a 9x9 or 8x11 pan that has been lined with wax paper. Press mixture firmly into the pan. Refrigerate for 3-4 hours before cutting into bars
