Baked BROCCOLI and CHEESE FRITTERS
1 pkg. (10-12 oz) frozen chopped broccoli
1 large egg………………………………………………1/2 cup flour
1/4 cup fresh grated parmesan or Italian blend cheese
1/4 cup grated mozzarella or Italian blend cheese
1 tsp. minced or crushed garlic…………………….1 tsp. Kosher salt
A pinch of red pepper flakes………………………..non-stick cooking spray

Preheat oven to 375. Line a baking sheet with foil and generously spray with non-stick spray (I used olive oil non-stick spray).
Thaw and drain the chopped broccoli. Put it into your food processor and give a couple of quick pulses (so it’s more like coarse crumbs).
In a large bowl, beat the eggs. Season with red pepper flakes, salt, pepper, and garlic powder. Mix in grated cheese and flour. Add the broccoli to the egg-flour mixture and mix.
I used a large cooking spoon to scoop out the mixture. Put it on the pan, and pat into shape with your hands. Lightly spray the patties on both sides with cooking spray. Bake for 25 minutes, turning the patties after the first 15 minutes. Makes about 6-8
These are good as-is, but you could serve them with a dollop of sour cream on top too.
