BLUEBERRY Frozen YOGURT POPSICLES
1 cup vanilla, blueberry honey or plain Greek yogurt
1/2 cup milk (half and half or heavy cream will result in a creamier popsicle, but you can use fat free or almond milk too ~ my favorite is unsweetened Vanilla Almond Milk)
1 cup blueberries (fresh or frozen)
sweetener to taste (honey, white sugar or agave nectar ~or~ regular white Splenda)
***
Whisk together Greek yogurt, milk, and sweetener to taste until smooth. Gently fold in blueberries. Pour mixture into popsicle molds (or Dixie cups ~ put a popsicle stick into the top). (Or, if you’re like me and can’t find the popsicle molds, but do have the stick tops ~ just put the yogurt mixture into solo or Dixie cups, and put that stick into the top.) Freeze at least 4 hours. Thaw for a few minutes before serving so they will be easier to remove from the molds (or quickly run the popsicle mold/cup under running water or set into a dish with some warm water).
NOTE: Of course you can just put this into a freezer Tupperware and eat it as a frozen yogurt instead of pops.
Makes about 4 medium or 6 smaller popsicles ~ or 2 large yogurt popsicles if you use a larger Solo cup
