KAHLUA BBQ CHICKEN
1 pound chicken parts (with skin, or skinless) ***
1/2 cup Kahlua or Tia Maria (coffee liqueur)
1/2 cup Soy Sauce ………………….................. 3 TB Red Wine Vinegar
1 tsp ground Ginger ……………….................. 1 TB Cornstarch

Whisk together all of the ingredients (except the chicken). Put the mixture into medium sauce pan over medium-high heat. Bring to a boil, and then immediately reduce heat to medium and whisk until consistency thickens (should only take a minute or two).
Poke holes in chicken using a fork, then put into a large plastic bag. Pour in marinade, seal bag and flip over a couple of times to make sure the chicken is coated. Refrigerate and let marinate for a couple of hours (flip over once or twice) ~ can even let it marinate overnight.
Preheat grill to medium heat. (*** If using skinless chicken, be sure to spray the grill, so they don’t stick) Grill for about 7-10 minutes on each side, until done all the way through. (About halfway through grilling on each side, give chicken a quarter turn to get criss-cross grill marks on them ~ optional)
TIP: Since there’s alcohol in the marinade, WATCH CAREFULLY so that they don’t burn!
