No matter how long you've been baking, sometimes unexplainable things happen in your kitchen! ... I was making my grandmother's PEACH BREAD (which I've made for over 40 years), and it just started oozing like crazy over the sides of the pan!  ... Luckily, I checked on it about 10 minutes early, so I saw it.

I sprayed 2 mini-pans with non-stick spray.  Then sliced the partially-baked peach bread close to the rim of the pan.  I put all the half-baked droppings into the mini-pans (don't try to pack them in ~ some pieces will be more baked than others, so just let it free form). 

Stuck those back into the oven with the 2 breads for about another 5 minutes (since they're just small uncooked pieces in there, they didn't need 10 minutes more).  When I took the mini-pans out of the oven, I drizzled the glaze that I'd made for the Peach Bread (brandy/peach glaze) very lightly on top of each one.   Let them cool for a few minutes; then turn out onto a plate and drizzle with a little more glaze.

They were DELICIOUS!  ... and according to my mom's rules of what things don't contain calories, guilt-free too!  (One of her items was "things you were going to throw out anyways) ... Whatever, it's YOUR treat and no one else has to know what happened .... (btw: the actual Peach Breads looked just fine when they were done ~  I guess Fate just decided I must be hungry)
