WHITE CHOCOLATE covered STRAWBERRY COOKIES * 3-D * shortbread style
1 cup unsalted butter, softened .......................................granulated and/or red sugar
1 small package of strawberry gelatin + granulated sugar to equal 1/2 cup total
2-1/2 cups flour......................................................................1/2 tsp almond extract
Food Coloring.........................................................................1 cup white chocolate chips
(can also use white almond melting bark or white melting candy wafers)
Green decorator icing (squirt type ~ storebought)................milk

Preheat oven to 300 (note the lower temperature than most cookies). Line baking sheets with parchment paper. ** In a small bowl, mix together some white granulated sugar with red decorator sugar (to equal about 1/2 cup) and set aside.
Mix butter and sugar in large mixer bowl. Beat in flour, sugar/gelatin mixture and almond extract, plus about 3-4 drops of red food coloring, until dough comes together and somewhat forms a ball around the mixer blade (probably about 2 minutes).
Pinch off about 1" pieces (maybe a heaping tsp) and roll in the palm of your hand. I do all my cookies first and put them onto the cookie sheets (so I can adjust any difference in sizes). {You should be able to fit 12-16 cookies per sheet} Then, roll each of the cookies into the little bowl of white & red sugar to coat. Press down one edge of each cookie with your left hand, while you pinch the opposite edge with forefinger & thumb of your right hand.
Bake 20 minutes or until set but not brown. (I put 2 pans in at one time, but switched their positions on the racks halfway through). Remove from cookie sheets to wire rack or paper to cool. Makes about 4 dozen
When they're cool, squirt 1 or 2 little leaves on the top of each cookie. ** Then, put the white chocolate chips into the microwave for about 1 minute. Stir with a spoon, to melt them all. If it's too thick to drizzle, I add about 1-2 tsp. milk and zap it for another 20 seconds. Then mix or whisk it well, so it's smooth drizzle consistency. Drizzle over each cookie (but work quickly, because the chocolate hardens up). I do a quick drizzle over each cookie (because I want to be sure I have enough glaze for them all); then go back and redrizzle them. That actually looks prettier because the 2nd drizzle will be a slightly different color and texture (as it hardens up). You can always stick the white chocolate back into the microwave (with teensy bit of milk) to melt it again (maybe 15-20 seconds)
