2 cups simple syrup (microwave recipe below)

2 cups water……………………………………………3/4 cup fresh lemon juice
1/4 cup fresh lime juice………………………………4 cups ice cubes
6 cups diced, chilled watermelon (about 2 lbs. after peeling)
Mint for garnish, optional

Put the watermelon into your blender or food processor; blend or pulse until it’s a smooth puree.
Mix the watermelon puree with the water, simple syrup, lemon & lime juice in a large pitcher or punch bowl. Add ice cubes and stir to blend well.
Put watermelon in a blender or food processor; and pulse until well pureed (there should be about 4 cups). Pour through a mesh strainer into a large pitcher (or divide equally in 2 pitchers). Add the water, simple syrup, lemon & lime juice and mix to blend really well. Stir in the ice cubes. Can garnish with mint, if you want.

Microwave SIMPLE SYRUP
Use this for lemonade, fruit punch, cocktails, fruit salad
1-1/2 cups water
2 cups sugar

Microwave 1 cup water in a microwave-safe 4-cup glass measuring cup at HIGH 1 minute and 30 seconds or until very hot. Stir in sugar; stir 20 seconds. Microwave at HIGH 45 seconds; stir until sugar is dissolved and mixture is clear. Cover and chill until ready to use. Store in an airtight container in refrigerator up to 1 month.
Makes about 2-1/2 cups ………………………..Takes 5 minutes
