and a CREAMY DRESSING that's a little bit tangy and a little bit sweet. You can adjust the sweetness and how creamy it is, according to what your family likes.
Sweet & Tangy BROCCOLI BACON SALAD
About 2 cups fresh broccoli, chopped & micro-steamed ~or~ 1 pkg. frozen broccoli cuts, heated as below (not fully cooked)
2 TB White Sugar (or plain white Splenda)
2 TB apple cider vinegar
1 tsp. salt and pepper to taste
1/2 Cup Mayonnaise ~or~ plain Greek yogurt
About 1/2 Cup shredded cheese (I like orange / white blend best)
1/4 cup sweet white onion, small chopped
About 6 Slices Bacon, cooked crisp and chopped
1/4 cup dried cranberries
Optional: 1/4 cup chopped pecans or walnuts

Micro-steam fresh broccoli in small bowl with about 1/4" water (covered w/waxed paper) for about 2 min. ONLY. Microwave thawed frozen broccoli same amount of time ~ but about 4 min. for frozen broccoli.
In a large bowl, whisk together mayonnaise/Greek yogurt, vinegar and sugar.
Put the drained broccoli, crumbled bacon, and rest of the ingredients into the large bowl with dressing. Gently toss with rubber scraper. Chill at least an hour.
If you want it sweeter, add more sugar to the dressing ~
If you want it creamier, add more mayo to the dressing
I keep the leftovers in a covered glass dish in the refrigerator. It will keep well for several days.
