Super Crispy BAKED CHICKEN WINGS
10 whole chicken wings (or 15-20 drummettes or wingettes)
1 TB baking powder (NOT baking soda) * This is your secret ingredient!
1/2 tsp. Kosher salt

1/3 cup flour………………………………………1 tsp. garlic powder
2 TB paprika (I like half regular paprika & half smoked paprika)
1 tsp. black pepper………………………………1 tsp. Kosher salt
1 tsp. dried oregano……………………………..3 TB butter, cut into small cubes

Preheat oven to 250°F. Line a baking sheet with foil and put a rack on top of the foil to pre-bake the chicken wings on.
Put the baking powder & salt into a bowl or plastic bag and mix well. Toss the chicken into the bowl (easiest to do this in a plastic bag) and coat well. Put the coated wings on the rack in single layer. Bake at 250 for about 30 minutes.
Meanwhile, toss together the rest of the ingredients in a large bowl or plastic bag. After the wings have baked for 30 minutes, take them out and put into the bowl or bag (no, they won't be hot enough to melt the plastic bag) with the seasoned flour mix and toss them around to coat them well. ** Turn the oven up to 425 degrees before you start tossing the wings the 2nd time, so it has time to heat up **
Put the coated chicken wings in a single layer on the foil-lined sheet (no rack this time). Scatter the butter cubes around the chicken on the foil. Bake wings for 20 minutes. Turn the wings over and bake another 15-20 minutes.
