This is a recipe that I've had for over 35 years. I'd serve them as appetizers to a crowd (putting the plate on a warming tray), with toothpicks.
But, I also discovered that it's a great side dish for children! (Yes, all the kids in our family like spinach) They love the little balls and can even pick them up to eat them. They'd also be an elegant side dish for company with a prime rib roast. |
18-20 oz. frozen chopped spinach (usually 2 boxes)
2 cups seasoned stuffing mix (i.e. the kind in a bag)
1 cup grated Parmesan cheese
salt & pepper to taste
6 eggs, slightly beaten
1/4 lb. plus 4 TB (1/2 stick) butter, softened
Defrost spinach; drain and squeeze out water. Mix all ingredients together and form into walnut-sized balls. Bake on cookie sheet at 350 for about 10 minutes.
