SPICED RUM glazed HAM
4-5 lb. boneless ham (can be larger or smaller ~ just adjust the other ingredients accordingly)
1/4 cup fresh pineapple or orange juice (I made a fruit salad with fresh pineapple to serve with this and used the juice from the pineapple)
1/4 cup light agave nectar
2-3 TB spiced RUM
1/4 tsp. cinnamon
1/8 tsp. cloves
dash of ginger
OPTIONAL: 1-2 TB apricot-pineapple preserves or orange marmalade (could be sugar-free)

Preheat oven to 350. Line a roasting pan with foil and set a rack into the pan. Pour some water in the pan (about 1/4") ** Make criss-cross slits in the top of your ham; then put the ham on the rack in the pan.
Whisk together the rest of the ingredients and brush them liberally all over the top and sides of the ham. Total baking time is 15 minutes per pound. ... Go in and baste the ham every 10-15 minutes while it's roasting. ** When it's done, let it rest on the counter about 10-15 minutes before slicing. I brushed the slices with any leftover marinade.
TIP: You could put some peeled, cubed SWEET POTATOES on the rack around the ham to roast at the same time, if you want. Sprinkle them with some Kosher salt and baste them with the marinade too (in fact, you could toss them in the marinade before putting them on the rack).
