2 cups cooked elbow macaroni, drained
2-3 hard-boiled eggs, chopped
1-2 TB. chopped fresh cilantro
4 pieces of bacon ~ cooked and crumbled
2-3 mini sweet peppers, seeded & diced (orange, yellow, red)
1/2 to 1 large jalapeno pepper, seeded and minced (optional)
1/2 large green bell pepper, seeded and diced
2-4 TB diced onion
Creamy DRESSING:
1/4 cup mayonnaise..............................................1/4 cup sour cream (or plain Greek yogurt)
2 TB spicy, Southwest or Creole mustard...............1 tsp. cracked or crushed red pepper
1/2 tsp. cumin.......................................................1 tsp. chili powder
1-2 tsp. Kosher salt...............................................1/2 tsp. cracked black pepper

Mix all the sauce ingredients together in a large bowl; stir in the rest of the ingredients and fold together until everything is coated and well mixed. Cover and put into the refrigerator until ready to serve.
