SMOKY TEXAS VEGETARIAN BEANS
1 lb. dried beans (pinto, Great Northern ~ really whatever you have on hand)
1-2 tsp. Kosher salt (if you're using regular table salt, don't use as much)
1 tsp. black pepper...………………………………....2 tsp. chili powder
1 tsp. smoked paprika...……………………………...1 tsp. cumin powder
2 tsp. dried oregano leaves...………………………..2 tsp liquid smoke (I like mesquite or hickory)
2 TB your favorite BBQ sauce (I like Stubb's hickory or mesquite)
1/4 cup white or yellow onion, finely chopped
about 1/4 cup green bell pepper, chopped
about 2 TB vegetable "Better than Bouillon".........6 cups water

Put everything into a large saucepan or small Dutch oven; stir well and bring to a boil. Give it a stir. Then cover and lower the temperature. Simmer for about 3-4 hours (stirring occasionally, and making sure the water still covers the beans ~ add a little more if necessary) ~ cook until the beans are tender when pressed against the side of the pot with a wooden spoon.
Serves about 8-10
