1 large russet potato for every 2-3 people..............................about 2 TB. butter per potato
Smoky paprika (about 2 tsp. per potato)................................Kosher salt
chopped fresh cilantro (about 1 TB. per potato)

Cut the potato(es) into about 1" to 1-1/2" cubes and toss into a pan with water to cover. Add a sprinkle of salt to the water, and bring to a boil. When it starts to boil, turn the water down to a high simmer and cook about 10 minutes (or until the potatoes are soft).
Immediately toss with the smokey paprika, cilantro, butter and Kosher salt (I use about 1 tsp. per large potato). Serve immediately, or put into a casserole dish to reheat in the microwave for about 5 minutes when you're ready for dinner.
