This also makes a healthy dessert ~ or not quite as healthy, but totally delicious with a scoop of vanilla ice cream on top!
SLICED CINNAMON BAKED APPLES
2 large or 3 medium apples, sliced (I like to leave the peel on) ~ I like to use 2 sweet red apples and 1 tart green apple if they're smaller ~ I used 2 large Honey Crisp apples here.
4 TB butter, melted……………………about 2 tsp. lemon juice
3 tsp. cinnamon………………………..1 tsp. vanilla extract
1/3 cup brown sugar (or 1 heaping TB brown Splenda + 2 tsp. plain white Splenda for sugar-free)

Preheat oven to 350. (Ignore this step if you’re going to microwave them.) Spray a casserole dish with buttery non-stick spray and set aside.
Mix the melted butter, lemon juice and vanilla together in a bowl. Add the apple slice and mix until they’re coated well. Set aside.
Put the cinnamon and brown sugar into a plastic bag. Hold tightly closed and shake until it’s mixed well. Then open and add the butter-coated apple slices to the bag. Hold tightly closed and shake until the apple slices are coated with the cinnamon sugar. Put the apple slices into the casserole dish. (do NOT add WATER!)
Cover and bake about 20-30 minutes, or until the apples are tender. ~OR~ Microwave (covered) for about 8 minutes, until the apples are tender.
Serves 2-3 (but so easy to double or triple the recipe)
