SHRIMP COCKTAIL SALAD
about 1 lb. small shrimp (cooked or raw ~ peeled & cleaned) ~ if raw, saute until pink
about 1/2 small iceberg lettuce, thinly sliced or chopped
about 1/2 small white or yellow onion, chopped............ 2 TB fresh parsley, chopped
1/4 cup green bell pepper, chopped................................. 2 stalks celery, small chopped
1/2 jalapeno pepper, seeded & minced (OPTIONAL)
HORSERADISH SAUCE
1/3 to 1/2 cup vinaigrette salad dressing (I used Red Pepper, but whatever you have on hand)
1-2 TB ketchup (not necessary if you use a red-based vinaigrette dressing, like I did)
1-2 TB horseradish sauce or 2-4 TB pure horseradish (depends how spicy you want it)
about 2T or more plain Greek yogurt or sour cream (can use the whole small 5 oz. container of Greek yogurt if you want it mild and very creamy)

Whisk together the sauce ingredients and put it into the bottom of a large salad bowl. Add the cooked shrimp, and all other ingredients (EXCEPT the lettuce). Toss until everything is evenly coated. Only add the chopped lettuce and toss well, just before ready to serve.
