I made these to send to my daughter and her family in San Diego a few months ago. They have root beer extract in them (near the other extracts at grocery store) * white chocolate chips * and vanilla pudding mix (which keeps them nice and soft) ** Then, there's a root beer glaze to drizzle over the top (or frost completely, if you want) **
From scratch ** really different flavor than most cookies you make! ** |
3/4 cup butter softened ……………………………3/4 cup light brown sugar
1/4 cup sugar………………………………………..... 2 eggs
1 small box instant vanilla pudding mix dry (not prepared)
1 tsp. Root Beer concentrate ……………………2-1/4 cup flour
1 tsp. baking soda
1-2 cups white chocolate chips

Preheat oven to 350. Line cookie sheets with parchment paper.
Cream butter and sugars together. Add instant vanilla pudding to butter and sugar mixture and mix well. Add eggs and root beer concentrate; beat until well incorporated. Add flour and baking soda; mix thoroughly. Mix in white chips.
Roll cookie dough into 1" balls; put on cookie sheets. Bake for 7-10 minutes. Let sit on cookie sheets about 5 min, then remove to rack (or paper) to frost.
FROSTING : (OPTIONAL)
3/4 cup powdered sugar …………………………..1 TB heavy whipping cream
1 TB softened butter……………………………..…. 1/2 tsp root beer extract
Beat frosting until smooth and creamy. Drizzle over cookies (or frost completely). ** Makes about 3 dozen
