ROASTED BALSAMIC Golden BEETS
3 medium golden beets, scrubbed, leaves trimmed ** ~ they usually come in bunches of 3
Kosher salt
WHITE Balsamic vinegar

Preheat oven to 425. Wrap beets individually in aluminum foil, place on a baking sheet, and roast in the oven until cooked through (fork-tender), approximately 45-60 minutes.
Remove from oven; carefully open the foil and let cool for 10 minutes. Then the peel and ends will just slide off when you rub them with your thumb or fingers ~ and slice into 1/4" thick slices. (NOTE: I slice them under cool running water, because they'll still be hot.) Lightly sprinkle with Kosher salt and white balsamic vinegar to taste. Serves about 4 (refrigerate leftovers and serve cold)
** Save the beet greens to use in another recipe (any recipe for fresh sautéed greens) ~ especially yummy with mustard, dandelion or collard greens sautéed with bacon!
