RED VELVET White Chocolate Chip CHRISTMAS SNOWFLAKE COOKIES
1 (15.25-oz.) box red velvet cake mix
1 stick unsalted butter, melted
2 large eggs
1 cup white chocolate chips
1 tsp. vanilla extract
2 TB flour
1/2 to 3/4 cup white snowflake sprinkles

Preheat the oven to 350°F. Line baking sheets with parchment paper and set aside. ** Put the sprinkles into a little dish and set aside.
Beat together the cake mix, vanilla, melted butter, flour and eggs in your electric mixer on medium until combined (it should start to come together around the paddle). Stir in the chocolate chips.
Scoop out about 1 TB dough and roll it into a ball. Put the balls in staggered rows of 3 on the baking sheets (I do all of them so I can be sure they're all the same size ~ you'll have about 3 dozen cookies). Then go back and dip the top of each ball into the sprinkles and put back onto the baking sheets. Flatten slightly with your fingers into about 1-1/2" circles.
Bake the cookies for 10 to 13 minutes or until they’re slightly crisped around the edges and still soft in the center. (The cookies will puff up slightly while baking but then settle as they cool.) Let them cool on the pan a few minutes before removing to paper or racks to cool completely.
