PUMPKIN Marinated PORK CHOPS * PUMPKIN Honey Mustard SAUCE
1 TB pumpkin puree
1 tsp crushed garlic
1 tsp honey
1 tsp extra-virgin olive oil
1 TB apple cider vinegar
1/2 tsp Kosher salt
1 tsp minced fresh rosemary (or 1/2 tsp dried rosemary, tarragon or sage)
2-4 thick sirloin pork chops

Whisk all ingredients (except pork) together in a small bowl. Pour over pork chops and marinate for an hour (or more).
Bake at 375 for 40-45 minutes (depending on size of pork chops) or until done. *OR* Grill on your BBQ (8-10 minutes per side, depending on size and cut of your pork) or until done. Serves 2
PUMPKIN HONEY MUSTARD SAUCE
1 TB pumpkin puree
1 TB Honey mustard
1 TB sour cream
1 tsp balsamic vinegar
1/4 tsp Kosher salt
About 1/2 tsp snipped fresh herbs (use whatever you used in the marinade)
Whisk together in a small bowl. Refrigerate until serving time and serve over the pork chops.
