This is a Fall twist on those 7-layer bars that even loves ** graham crust, condensed milk, chocolate chips, nuts, coconut and PUMPKIN **
These are so MOIST and nothing else really tastes like them ** VERY EASY to make * I always make Magic Cookie Bars with a glaze on top too, to make them even extra-special. |
5 TB melted butter
3/4 cup graham cracker crumbs
1/2 can sweetened condensed milk
3 TB pumpkin puree
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup flaked coconut
1/2 cup chopped nuts (walnuts, hazelnuts, pecans)
1/2 cup chocolate chips and/or butterscotch chips

Spread melted butter in bottom of 8” pan. Spread graham cracker crumbs evenly over butter (shake pan a little to spread them). In small bowl, combine sweetened condensed milk with pumpkin, cinnamon and nutmeg; spread evenly over graham crackers (use back of spoon to gently spread). Spread next 3 ingredients, in order, over the pumpkin-milk mixture.
Bake at 350 for 20-30 minutes until somewhat firm. Drizzle with glaze (if desired). Cool; cut into small bars.
GLAZE: Put about 3/4 cup powdered sugar into a small bowl. Add about 1 tsp. pureed pumpkin and a quick shake of cinnamon. Whisk in liquid (chocolate syrup * hazelnut, caramel or spice liquid coffee creamer * milk * orange juice * brandy * whatever you like!) 1 tsp at a time, until creamy, spreading consistency (adjust consistency by adding more sugar/liquid). Drizzle over edges of bars, and then in criss-cross lines over the top of bars ~ or just spread it evenly on top.
