PUMPKIN CHOCOLATE CHIP MUFFINS
(Sugar Crusted Muffin Tops)
1 cup sugar...............................................................1/2 cup oil
2 eggs.......................................................................1 tsp vanilla
1-3/4 cup flour
1/2 tsp EACH salt AND baking soda AND baking powder
1-1/2 tsp pumpkin pie spice (OR 1 tsp cinnamon & 1/4 tsp each nutmeg and ginger)
1/3 cup milk or sour cream (sour cream makes a denser, yet moister muffin)
1 cup pumpkin puree (not pie filling)
1/2 cup chocolate chips (I like mini morsels)
Sugar Topping:
2 TB flour.................................................................8 TB sugar
1/2 tsp cinnamon....................................................2 TB cold butter, cut in pieces
In small bowl, mix together sour cream & pumpkin; set aside. Mix sugar, oil, eggs, vanilla, spices, salt, baking soda & baking powder together well; add flour to mixture ~ alternating with pumpkin mixture & mix to blend thoroughly. Fold in chocolate chips. Fill 12 greased muffin cups (or spray cupcake papers) ~ Sprinkle topping over muffins and bake at 350 for 15-20 minutes. Makes 12
Topping: Cut together all ingredients with pastry cutter or forks until crumbly.
