1 box yellow or butter cake mix(or pistachio cake mix, if you can find it)
1 box instant pistachio pudding (3.4oz)………....….2 eggs
1/2 cup vegetable oil……………………………………1-2 drops green food color (opt) 1/2 cup chopped pistachio nuts ~OR~ 1 cup Rice Krispie cereal
green sprinkles or sparkling sugar (optional)
Preheat oven to 350°. Line baking sheets with parchment paper. In a large bowl, beat together the cake mix, pudding, eggs and oil ~ until the dough comes together well. Mix in the nuts or Rice Krispies.
Scoop out with a 1” cookie scoop and roll into balls. Put at least 2” apart on the baking sheets (they will spread). I put a quick shake of green decorating sugar on top of each cookie before I baked them.
Bake for 7-9 minutes (or until just starting to lightly brown at the edges). Cool on the pan for about 5 minutes, then remove to rack or paper to cool completely. Makes about 3 dozen.
**note: they will firm up as they cool
