1 box strawberry cake mix (or whatever flavor you like)
1 container strawberry frosting (or to match cake flavor)
2 bags pink frosting melts
2 TB Crisco
36-48 lollipop sticks
2 rectangle Styrofoam
pink jelly bellies (2 per pig ~ 72 to 96 total)
pink M&Ms (or pink mentos ~ 36-48, or other flat pink candy discs)
edible paint pen (or dark tub of solid food color & toothpick)
Make cake according to package (any size pan) and cool completely.
Crumble up cake very well, into a large bowl. With your hands, thoroughly mix in 1/2 of the container of frosting until mixture is well blended and will mold together (if your hands aren’t completely covered and messy, you’re not mixing it up enough). (I found that there’s less air when you form the pops if you mash the cake mixture into tight rolls of batter first) Roll about 1-1/2” balls tightly in your hand and place on a baking sheet. Freeze the balls at least 30 minutes. (HINT: Now that you know how many you have, I pre-stick holes into the Styrofoam)
Dip the ends of the sticks into the other half of the frosting container and stick into the frozen balls. Freeze for at least another 30 minutes.
Melt the pink icing melts in a microwave bowl (I did half at a time)~90 seconds may work, or maybe another 15 seconds. Take it out and blend in 1 TB Crisco (per each bag of melts). Dip each FROZEN cake pop into melts, roll to cover ~ put 2 jelly bellies into the top of each pig; and stick pop into the styrofoam. (Easiest to do this in batches of 2) Put the piggies in styrofoam back into the freezer at least 30 minutes.
Meanwhile, put 2 dots on each M&M (or wafer) with edible pen (or end of toothpick dipped into little tub of concentrated food color) for the nose. Using leftover melts (re-melt, if necessary), put a dab on the back of each nose and stick onto the pig face. (I laid the pops onto the baking sheet for frosting to dry, so the noses don’t slide off) You can refrigerate or freeze if you want. When noses are firmly attached, use edible pen to dab on 2 eyes. Stick them back into the styrofoam and refrigerate.
