I got this recipe from an English friend about 40 years ago. Whenever I see the recipe, I can just hear her calling everyone "Duckie".
An easy 3-ingredient crust that's lightly kneaded together. Then you make little 1" balls and press them into a miniature muffin tin. Make an indentation and put a teaspoon of the brown sugar-pecan filling inside. Bake and eat! So easy, but impressive to serve too. These are beautiful on a tiered tray on a dessert buffet table. |
1 stick (8 TB) unsalted butter, chilled, cut in pieces
3 oz. cream cheese, chilled, cut into pieces
1 cup flour

Mix the above until mixture is crumbly (as for a pie dough). (Note: you can pulse this quickly in your food processor too).
Knead slightly until its smooth and holds together well. Make 1” balls. Press dough into miniature muffin pans (lightly sprayed). Put 1 tsp of filling into each cup.
Bake at 350 for 15-18 minutes; then bake at 250 for another 10 minutes. Loosen gently from pan while warm.
FILLING:
1 beaten egg
3/4 cup dark brown sugar (not packed)
dash salt
1 tsp vanilla extract
1/2 cup (or a little more) chopped pecans
