PEACH Frozen YOGURT POPSICLES
2 cups quartered peaches, pitted and unpeeled (about 3 medium peaches)
1/2 (4 oz.) cup vanilla, honey or peach Greek yogurt
1 tsp. honey
Put peaches into a blender or food processor. Puree until mostly smooth. Pulse in the honey and Greek yogurt until well blended. Put it into a freezer container and pop into the freezer for an hour or 2. Then take it out, scrape around the sides of the container and mix up the partially-frozen yogurt. (If you want to make popsicles, now is the time to fill the molds.) Put it back into the freezer for a couple of more hours (or even overnight). It will be like soft serve ice cream, but the longer you leave it in the freezer the harder it gets. (but once you taste it, it's way too hard to keep it in the freezer for very long!)
Makes 5-6 (3-oz.) popsicles or about 1 pint frozen yogurt.
