Oven-baked DENVER OMELET (Main dish or appetizer)
8 large eggs……………………………………….......................1 cup milk
1 cup (4 oz.) shredded cheddar cheese ~or~ orange/white cheese blend
1 cup finely chopped fully cooked ham…...........……1-2 tsp. Kosher salt
1/2 cup finely chopped green and/or red bell pepper (or mini sweet peppers)
1/2 cup finely chopped onion…………………................1 tsp. black pepper
1 tsp. dried thyme……………………………….....................1 TB. chopped fresh parsley

Preheat oven to 350. Spray a 9” or 10” square pan with buttery spray.
In a large bowl, whisk together eggs, milk, salt and pepper. Stir in the cheese, ham, thyme, parsley, green pepper and onion. Pour into prepared pan.
Bake, uncovered, about 40 minutes or until a knife inserted near the center comes out clean, and it's all puffed up. Let stand a couple of minutes before cutting (it will sink a little).
Serves 3-4 for dinner
Great with a fresh fruit salad for breakfast, lunch or dinner

APPETIZER:
Make this in a sprayed 9x13” pan (check after 25-30 minutes). Cut into small (about 1-1/2”) squares and serve room temperature (no garnishes)
