1-1/2 cups firmly packed brown sugar (I like dark)
1 cup shortening (i.e. Crisco or buttery Crisco)
2 TB molasses …..............................……………..... 2 tsp vanilla extract
2 eggs …………..............................……………......…. 1 cup all-purpose flour
3 cups quick-cooking rolled oats
1 tsp baking soda ……................................……… 1 tsp salt
3/4 cup chopped nuts (optional)
1 12-oz. pkg semi-sweet, dark or mini-morsel chocolate chips
***
Preheat oven to 350. Grease (or spray) 13x9” pan.
In large bowl, beat brown sugar and shortening until light and fluffy. Add molasses, vanilla and eggs; blend well. Stir in flour, oats, baking soda and salt; blend to mix well. Stir in nuts and chocolate chips. Spread in prepared pan.
Bake for 17-25 minutes or until light golden brown and center is set (remember that dark pans bake faster than light-colored pans). Cool slightly ~ drizzle with chocolate glaze (below) ~ cut into bars. Serve warm or cool. Makes about 48 bars.
CHOCOLATE GLAZE:
1/2 cup (about 3 oz) chocolate chips
1 tsp shortening
Melt chocolate chips with shortening (can do in microwave ~ about 45 seconds); stir until smooth. Drizzle over slightly cooled bars.
