1 cup of raw white rice (minute or regular) * then cook per directions
3 eggs
4 cups milk
few drops lemon juice
1/2 cup sugar
butter and cinnamon to garnish
Cook rice until done. Beat in eggs and add other ingredients. Bake in buttered (sprayed) casserole dish for 1 hour in 350 oven. Dot with butter and sprinkle with cinnamon to serve. Serve warm or cold.
NOTE: My mom didn’t put raisins in her rice pudding, but if you want them: soak the raisins in juice while the rice is cooking (to plump them up) ~ add in to the rice/egg mixture
