Marinated BALSAMIC HONEY CARROT & ONION SALAD
Dressing ingredients:
1/4 cup balsamic vinegar
2 TB honey
3 TB extra-virgin olive oil
1/2 tsp. Kosher salt
Whisk together the honey, salt and balsamic vinegar. Drizzle in the olive oil while whisking.

at least 2 large or 4 smallish-medium carrots ~ peeled & sliced (no more than about 1/4" thick)
about 1/4 to 1/2 cup thinly sliced white or yellow onion (I cut the slices in 1/4s then)
fresh chopped cilantro (if you don't like cilantro, then you could use fresh parsley or fresh oregano)
about 2 TB of the dressing per every 2 large carrots (or 4 smallish-medium)
about 1/2 to 1 tsp. Kosher salt...…...…...……...……….about 1/2 tsp. pepper

Put the sliced carrots into a microwave-proof container with about 1/4" water. Cover and microwave for 3-5 minutes. (Time depends if you have large or small carrot slices in there)
Meanwhile, put the onions, cilantro, salt & pepper in a bowl. When the carrots are done, drain them and put them on top of the carrots. Immediately put the dressing on top of them and toss until everything is well coated. Then put the salad into a glass container, with lid. Let it cool a little before putting into the refrigerator (although you could serve it room temperature too).
