This is my "go-to" fruit salad, that I make whenever I want to serve fresh fruit to a crowd ** I always serve it for Easter Brunch, with our ham ~ and also when I have the neighborhood women over for a games night (light supper) **
Just a light, subtle dressing of TEQUILA and LIME * enhances the sweetness of the fresh fruit ** I always use the big ceramic watermelon bowl, but you can serve it in a big glass bowl with a salt rim (like a real margarita) |
4 cups assorted fruit, chilled: (blueberries, cubed honeydew/cantaloupe/watermelon, cubed pineapple, mandarin oranges, seedless grapes, kiwi (peeled & sliced), cubed mangoes, papayas and/or halved strawberries)
3 tsp. granulated sugar .................................................2 shots (about 2 oz) TEQUILA
2 TB orange liqueur (I use Triple Sec)............................. 1 tsp. grated lime zest
2 TB lime juice ............................................................... 1 lime wedge
Garnish: fresh mint leaves or coarse decorating sugar (optional)
Mix fruit in large bowl. Whisk sugar and tequila with lime zest and juice in small bowl. Toss with fruit, cover and chill. Stick fresh mint leaves in the corner as a garnish
NOTE: Can also be served with toothpicks as an APPETIZER
OPTIONAL GARNISH: Rub lime wedge around rim of glass salad bowl/margarita glasses; dip bowl or glasses in sugar. Fill salad bowl or each glass with fruit salad. serves 6-10
