8 oz. (1/2 lb) cooked lobster (or crab, or even imitation krab) ***
2 TB unsalted butter…………………………………2 tsp. minced or chopped garlic
2-3 green onions, finely chopped...............................1 TB flour
1 tsp Kosher salt ………………………….………….1 beaten egg
1 cup 2% or whole milk……………………………..1-2 TB dry sherry or Madeira
1 tsp cayenne…………………………………………..1/2 tsp nutmeg
6-8 button mushrooms, washed and sliced
2-3 whole English muffins, cut in half and toasted

In a small bowl, lightly beat the egg with a fork and set aside. Reserve about 1 TB of the chopped green onion tops, and set aside.
Melt butter in medium skillet over medium-high heat. Add minced garlic, mushrooms and green onions, cook for about 3-4 minutes. Whisk in flour, salt, and pepper ~ then whisk in the milk and cook until bubbling ~ then cook 1 more minute.
Take a tablespoon of the hot mixture and whisk together with the beaten egg. Return all to the pan; mix well and continue to cook until thickened and slightly bubbly. Stir in sherry, cayenne, nutmeg, and cooked lobster.
Serve over toasted English muffins Sprinkle the reserved minced green onions on top. Serves about 4
*** NOTE: If you use Imitation Krab, it usually comes in a 12 oz. package. You may want to increase the milk to about 1-1/2 cups then, and add another 1-2 tsp. of flour.
