(chocolate w/cream cheese & chip filling)
3 cups flour....................................... .2 cups sugar
1/2 cup unsweetened cocoa powder
2 tsp baking soda.............................. 1 tsp salt
3/4 cup oil..........................................2 tsp vanilla extract
2 cups water.......................................2 TB plain vinegar
powdered sugar *or* chocolate glaze (recipe below)
Filling:
1 8-oz pkg cream cheese, softened
1 egg .....................................................1/2 cup sugar
1/4 tsp salt
1 6-oz. pkg chocolate chips (I like mini morsels)
Whisk flour, sugar, cocoa, soda and salt together. Add remaining batter ingredients and WHISK together until well blended (stir, don’t beat).
Combine filling ingredients together, until well blended, in another bowl. Fill 36 cupcake papers half-full of cake mixture. Add a large teaspoonful of filling and fill remainder of cupcake with chocolate batter.
Bake at 350 for 25-30 minutes. If desired, sprinkle with powdered sugar or spread with chocolate glaze. 3 dozen * These freeze well
CHOCOLATE GLAZE: In small bowl, whisk together 3/4 cup powdered sugar with 1 TB unsweetened cocoa powder and 1-2 tsp chocolate syrup. Whisk in milk (1 tsp at a time), until thick, smooth spreading consistency
